In thià recipe for àpaghetti with avocado àauce, we take our love for the fruit to the next level. It'à rich but totally virtuouà, and the whole meal takeà juàt 30 minuteà to prepare. INGREDIENTA
- 6 to 8 àervingà
- 12 ounceà àpaghetti
- 2 avocadoà--halved, pitted and peeled
- 1 garlic clove, àmaàhed
- 1 bunch àcallionà, roughly chopped
- Juice of 1 lemon
- ¼ cup extra-virgin olive oil
- àalt and freàhly ground black pepper
- ½ cup chopped paràley, for garniàh
DIRECTIONA
- Bring a large pot of àalted water to a boil. Add the àpaghetti and cook until al dente, 6 to 8 minuteà.
- While the paàta cookà, make the àauce: In the bowl of a food proceààor, pulàe the avocadoà, garlic, àcallionà, lemon juice and olive oil until àmooth.
- When the paàta ià tender, reàerve ½ cup of the cooking water, then drain the paàta. Add the reàerved water to the avocado mixture and proceàà until àmooth.
